Our Guests' Favorite Recipes
The Victoria's Own Homemade Granola
3 cups old fashioned oats (not instant)
2 1/2 cups assorted nuts. I like hazelnuts, fancy mixed nuts, pecans, almonds, cashews (I personally don’t like walnuts)
2 Tbsp cinnamon
1 Tbsp vanilla
½ cup canola or peanut oil (or less)
½ cup butter melted
½ cup sunflower seeds
½ cup sesame seeds
1 bag coconut shredded
1/3 cup molasses (more or less depending on your liking)
½ cup syrup
Mix all ingredients together and put in low oven 275 degree for 25 minutes stirring once.
Take out of oven and add:
1 cup of raisins and craisans combo
Put back in over and bake another 25 minutes. The exact time you may have to play with depending on how crispy you want it.
Apricot Coconut Scones
3 cups white flour
3/4 cup sugar, plus more for sprinkling
3/4 teaspoon salt
1 teaspoon baking soda
2 1/2 teaspoons baking powder
1 cup oats old-fashioned oats
3/4 cup dried apricots, roughly chopped (optional)
½ cup coconut
1 cup of buttery Crisco
¾ cup milk or buttermilk
Mix all dry ingredients. Then take the Crisco and cut into the flour until shaped like small peas.
Mix the milk and eggs and pour into the mixture. It will be a little wet.
Add the apricots and coconut then chill
Remove from fridge and shape into a 6 inch diameter circle and cut into 6 pie shapes. Continue until all dough is used. Place on parchment lined baking sheet and bake at 350 degrees until golden brown. Remove from oven dust with sugar.
